Take 3 Won't Be as Tasty as Planned
This is the third year I have taken the Slice of Life challenge. Both previous experiences were wonderful, and I had been planning on doing an even better job on the third take. I enjoy challenging myself, and have always felt successful and fulfilled upon completion in the past. This year I wanted to challenge myself in two ways: one is just taking the Slice challenge (it's so much more difficult than you might imagine it to be!), and the other was supposed to be cooking something from scratch/fresh every day for 31 days and posting the recipe and photos on this blog. Well, folks, one of those goals just isn't going to happen. I write this blog post while lying in bed at the Capital Plaza Hotel in Jefferson City, MO. For breakfast I had oatmeal, lunch was from Culver's, and dinner was at Madison's in downtown JC. Unfortunately, this double room doesn't come with a kitchen, so I won't be cooking anything today. Sometimes we don't get to do the things we intend to do exactly as we intended to do them on the timeline we intended to follow. I will Slice for 31 days, but I won't post a healthy dish for 31 days. That's ok! Each of our Slice experiences, like our lives, is unique. Some of us will have perfectly smooth travels along a seamless highway, whereas others will dodge potholes as we journey down an old bumpy road littered with banana peels, cigarette butts, and oil slicks hoping we don't run out of gas before March 31. However, in the end, we'll all taste the same sweet success, even if mine isn't freshly made from scratch.
